These cute mini apple crumble pies are the perfect dessert for your next dinner party… and for lunch the next day!

2 sheets frozen flaky puff pastry, thawed (or if you’re a whiz at baking, short pastry)
1 ½ cups thickly stewed apple
¼ cup brown sugar
½ tsp cinnamon

Option to add blackberries

50g butter
½ cup flour
¼ cup brown sugar
1 tbsp rolled oats

Option to add pecan nuts

  1. Cut pastry (or roll if short pastry) into squares and use to line a standard non-stick muffin tin, cut the corners of the pastry sticking above the rim.
  2. Mix apple, cinnamon and brown sugar together and spoon into pastry. Blend or rub crumble ingredients together to form a coarse, crumbly mixture.
  3. Sprinkle over apple mix and bake in a preheated 180°C oven for around 20 minutes, until the pastry is puffed and crisp (if puff pastry) and the topping golden.
  4. Remove pies from tin while still warm and dust with icing sugar.
  5. Serve with ice cream. (May be eaten cold if preferred)
