I was thinking about what we want to eat to keep warm this winter and decided it had to be super fast, apple crumble in a mug. So I searched the interwebs and found this fab recipe. I have tried and tested it (ate it before pics!) so can attest to its amazingness.
This is a sweet, chewy and fruit loaded Apple Crumble Mug Cake Recipe that tastes like you worked on it for hours, but is ready in less than 15 minutes!
This recipe makes two apple crumbles in a mug.
For the crumble
- ¼ cup butter melted (or your fave butter substitute)
- ½ cup quick oats
- 2 tablespoons brown sugar
- 2 tablespoons Maple syrup or honey
- 1 teaspoon cinnamon
- pinch of salt
For the apple filling
- 2 apples chopped bite size
- 1 tablespoon flour
- 1 tablespoon lemon juice
- 1 tablespoon brown sugar
- 2 tablespoons chopped walnuts
- option to add: cinnamon, nutmeg or all spice
In a bowl, combine all the ingredients for the crumble and mix well.
In a separate bowl, add the ingredients for the apple filling and mix well.
Divide the apple filling mixture among two mugs and top with crumble.
Microwave each mug, separately, on high for 3-4 minutes, until mixture is bubbly.
Be careful when you take the mugs out of the microwave as they will be VERY hot!! I use a towel.
Top with vanilla ice cream and a sprinkle of cinnamon. Serve and eat!
