I frickin love peanut butter. It’s the humble spread from everyone’s childhood and has totally stood the test of time. For me, it reminds me of my dad. Whenever we came home from getting the groceries, dad would remove the crust from a fresh loaf of bread and spread butter and crunchy peanut butter on it, and devour! This is something I love to do now. Irreplaceable goody goodness!!!!
And with winter in full swing, I love this tasty comfort food treat – perfect with my EPIC (just saying) homemade “everything” soup.
BUT… not all peanut butter is created equal. Yep, even our humble favourite spread, peanut butter, has been tainted with additives, preservatives and excessive amounts of salt and sugar. Euw!
Personally speaking, when it comes to peanut butter, the best of the bunch contain peanuts and feck all else. One of absolute faves is Chantal Organics Classic Crunch Peanut Butter – I’m a Hawkes Bay, gal, what can I say?? It’s made from only organic peanuts and a pinch of sea salt – nothing else. And its nutty-nut flavour is next level amazing (the smell alone is intoxicating!!!). Plus, it’s high in protein and fibre, which is the perfect excuse to use it in everything.
When I say everything, I mean everything! Of course it’s a staple on toast and irresistible straight from the jar, but peanut butter can be used to jazz up all kinds of recipes – like my Crunchy Peanut Satay Noodle Salad here.
So, here are a few of my favourites recipes which are sure to have your mouth watering.
1. Protein Smoothie
Protein shakes can be boring, so why not give them a little character and add in some peanuty goodness. When protein is the aim of the game there is no reason not to. This Peanut Butter Espresso Smoothie to kick start the day. Or imagine a banana choc peanut butter smoothie… amiriiiiight?
2. Overnight Oats
For those of you who get a little lazy on winter mornings, overnight oats are a lifesaver. With all the prep work done the night before they are great for the gal on the go. Adding a spoonful of peanut butter will not only make them taste better, but you begin your day with a hit of protein, fibre and healthy fats. Perfecto!
3. Peanut Butter Fudge
If you’re comfort eating, I say go all in. And this decadent little treat is extremely satisfying and even a little bit healthy. (OK… barely). This recipe by Julie Blanner is one of my faves. As I say… all in!
4. Satay Sauce
Satay sauce is the perfect addition to a warming winter dins. While it goes with almost anything, I love using it to spice up tofu. Soooooo good!!!
5. Pad Thai
No roasted peanuts? No problem. A cheeky bit of peanut butter is the easiest way to whip up everyone’s favourite Thai dish in no time at all.
