Winter Warmer – Kumara and Bacon Soup

Brrrr it’s cold outside! Warm up with this delicious homemade soup recipe…sure to warm you from the inside out!
This batch serves 6 people – perfect to keep in the fridge or freezer for work lunches or easy dinners during the week!

Ingredients

1 Tablespoon Campbells Vegetable Stock
2 Medium Onions (chopped)
4 Cloves Garlic (crushed)
1 Tablespoon Ginger (grated)
500 Grams Bacon Rashers (chopped)
1 Stem Fresh Lemongrass
2 Tablespoons Coriander (ground)
2 Tablespoons Cumin (ground)
2 Teaspoons Anise (ground)
1 Tablespoon Garim Masala
3 Large Kumara
2 Litres Water
4 Cubes Bacon Stock

Method

Heat oil in large pan.
Add onions, garlic, ginger, bacon, lemon grass and spices.
Cook, stirring, until onions are soft.
Add kumara, water and crumbled stock cubes.
Simmer, covered, for about 30 minutes or until kumara is soft.
Remove lid and simmer for 15 minutes.
Blend or process mixture in batches until smooth, return to pan, and stir until hot.
