
I don’t know about you, but I really LOVE peanut butter. My day is incomplete without it to be honest. I go down the sugar-free route, and with it’s high protein content, it’s guilt free consumption as far as I’m concerned.
With PB being a constant food vice of mine, it was with great excitement a number of years ago that I discovered Peanut Butter & Co.’s sandwich shop in NYC.
On my first visit, I was torn between pretty much everything on the menu. Do I choose the chocolate peanut butter pie, the peanut butter brownie, or The Elvis? With a name like that, I figured I had to give it a go.
(On August 16, it will be 35 years since the King passed away. A lover of this tasty snack and the reason it is so often nickname ‘The Elvis’).
A sandwich with bacon, banana, peanut butter, and honey. Interesting combo some might say, a winning combo I can certainly confirm! Whilst my arteries might have needed a breather post sandwich consumption, it was worth every single calorie.

Ingredients

| 2 | slices | bread of your choice |
| 2 | tablespoons | peanut butter – crunchy or smooth |
| 1/2 | large | ripe banana sliced lengthways |
| 2 | slices | bacon |
| 2 | tablespoons | honey |
Method
Grill the two slices of bacon.
Spread butter on one side of each slice of bread. Spread peanut butter on other side of each slice of bread.
Place banana slices on top of peanut butter. Top with bacon slices and drizzle with honey. Top with the remaining slice of bread, buttered side up.
Place sandwich on grill pan. Cook until golden brown and crispy, about 3 minutes per side.
Remove to cutting board, slice in half, and serve immediately.
