
A quick, easy & delicious treat to make when you’ve got unexpected guests arriving, or just want something nice to take into the office for lunch. This is guaranteed to not stay in your pantry for long! For this recipe I decided to substitute the ground cinnamon with swirls of Nutella-it is entirely up to you though which flavour you end up using!
Ingredients

| 1 2/3 cups. | 230g. | Plain (all-purpose) flour. |
| 1 1/2 teaspoons. | Baking powder. | |
| 1/3 cup. | 75g. | Caster (superfine) sugar. |
| 1/3 cup. | 110g. | Brown sugar. |
| 1 teaspoon. | Ground cinnamon. | |
| 1 teaspoon. | Vanilla extract. | |
| 2. | Eggs. | |
| 1/2 cup. | 125 mL. | Vegetable oil. |
| 3. | 1 1/2 cups. | Mashed bananas. |
| 2 1/2 dessert spoons. | Nutella (optional). | |
Method
1) Combine plain (all-purpose) flour, baking powder, caster sugar, brown sugar, ground cinnamon & vanilla extract.2) Make a well in the centre, add 2 eggs, vegetable oil & 3 mashed bananas & mix to combine.3) Pour into a greased 20cm x 10cm x 10cm loaf tin.4) Sprinkle with brown sugar & bake in a preheated 160C (320F) oven for 60 minutes or until cooked when tested.
