Peanut Butter Fudge

Who doesn’t like to indulge with a creamy piece of fudge every now and again? The correct answer is no one. There are all the usual types – Chocolate, Russian, Vanilla – but others are something even more special. Like this super quick, four ingredient peanut butter version.

This is the perfect fudge to make when you’re short on time but still want to make something a little different. This fudge uses icing sugar rather than white sugar, enabling you to get that amazing creamy texture without the need to carefully melt the sugar.

The fudge is so easy to make you hardly need a recipe to make it! However, I do have a couple of tips to help ensure you don’t end up with a mess on your hands:

Tip #1: Use a BIG bowl – make sure you use the biggest bowl you can fit in your microwave. I used the bowl of my stand mixer for this, and even then the melted butter and peanut butter boiled up to within five centimetres of the rim. Any smaller and you’ll have a very greasy, hot mess filling your microwave.

Tip #2: Use an electric mixer – while you can mix the icing sugar into the butters by hand, it will be a slow and painful process. If you use the paddle attachment of your mixer though, you’ll be finished in 30 seconds.

Tip #3: Expect a dough – as the sugar component isn’t melted, this isn’t a runny fudge. The finished product will look more like cookie dough than fudge.

Tip #4: Use a spoon – while the fudge won’t be scolding hot, it’s still very warm when you press it into your tin. To save your fingers the pain, scoop and press the mixture into the pan using the back of a large spoon.

Ingredients

225g butter
1 cup peanut butter, smooth
4 cups icing sugar
1 tsp vanilla extract

Method

1. Place butter and peanut butter in a large bowl and microwave on high for two minutes. Remove and stir until the two butters are combined. Microwave again for one minute, stir quickly, then heat for another minute.
2. Add vanilla extract and icing sugar. Mix until well combined and a soft dough forms.
3. Scoop mixture into a greased or lined pan. Press down firmly. Top with chocolate chips if desired.
4. Place in fridge to cool for approx. 2 hours.
