|1 1/2 cups shortgrain or sushi rice, cooked|
|1 tbsp rice wine vinegar|
|1 tbsp sugar|
|1 pkt MAGGI Creme of Chicken Soup Mix|
|2 tsp canola oil|
|300 g skinless chicken breast fillet, cut into thin strips|
|1 tsp canola oil or cooking spray, extra|
|6 sheets dried nori|
|1/2 red capsicum, thinly sliced|
|1/2 carrot cut into matchsticks|
|1 avocado thinly sliced|
|1/2 cucumber, seeded and thinly sliced|
1. Place cooked rice in a bowl and stir in vinegar and sugar. If still warm allow to cool.
2. Combine MAGGI Creme of Chicken Soup Mix and oil. Add chicken and mix well. Heat a large non-stick frying pan with oil. Add chicken and stir fry over high heat for 4 minutes or until cooked. Allow to cool.
3. Place 1 sheet of nori, shiny side down, on a bamboo mat. Cover two-thirds nori with rice, gently pressing down. Place chicken and vegetables in a strip along the centre of the rice. Brush uncovered nori with water. Roll up, using bamboo mat to help roll tightly. Cover with plastic wrap and refrigerate to chill. Repeat with each sheet of nori.
4. Slice and serve with soy sauce, wasabi and pickled ginger if desired.
