
This dessert is very easy to make & is super healthy+delicious coming in at under 100 calories per serving. If you want to make it more indulgent though you can serve it with ice-cream & chocolate garnishes, as we did.
Ingredients

| 2 | Ripe Mangoes. | |
| 1/2 | Grated Lime Zest. | |
| 250g | 0% Fat Greek Yoghurt. | |
| 2 | Medium Egg Whites | |
| 50g | Caster Sugar. | |
| 3 | Passion Fruits. | |
Method
1. Peel mangoes & cut flesh from stones. Discard stones. Blend flesh & lime zest until completely smooth. Empty into large bowl & whisk in yoghurt. *If you want to you can substitute the Lime with Lemon instead, depending on what’s available to you.
2. Put egg whites into a separate large bowl & whisk with clean beaters until stiff but not dry. Gradualy add sugar & continue whisking until thick & glossy. Using a large metal spoon, fold the whites into the mango mixture. Divide among six glasses & chill mousses until needed.

3. Cut passion fruits in half & scrape the pips & juice into a bowl. Top each mousse with a teaspoonful of passionfruit pulp & serve.
