Ingredients

| 1 | 3 second spray | oil |
| 250 | grams | lamb mince |
| 1 | cup | cooked pearl barley |
| 1 | medium | onion, coarsely chopped |
| 1 | medium | carrot, peeled, coarsely chopped |
| 250 | grams | parsnip, peeled, coarsely chopped |
| 1 | whole leek | washed, thinly sliced |
| 2 | tsp | fresh flat-leaf parsley, finely chopped |
Method
Spray a large saucepan with oil and place over high heat. Dry-fry mince for 5 minutes, stirring frequently to separate meat. Allow to brown. Add stock and bring to the boil. Use a large spoon or ladle to remove any skin that forms on surface. Discard.Reduce heat to low. Add pearl barley and prepared vegetables. Season to taste with salt and pepper. Cover and simmer for 50-60 minutes, or until vegetables are tender.
Stir in parsley and serve immediately.
You can make this meal up to a day in advance then reheat following day. The good thing about this is that you could make it on Sunday when you have more time for cooking, then have it for dinner Monday night.
