Grilled Peach and Mozzarella Salad

Last week I was in need of some dinner inspiration and with summer finally showing it’s sunny face here in London, I decided a salad was to be on the menu.

Now, I know it’s not exactly sunbathing weather in the Southern Hemisphere, but below is my light and healthy creation so you too can share in a little summer themed indulgence…

Ingredients

Amount Measurement Ingredient
1 peach
Large handful rocket salad
6-7 cherry tomatoes
1 red onion
buffalo mozzarella
Handful basil
balsamic vinegar

Method

Cut the peach into small wedges and put under the grill, on a George Foreman, or on a griddle pan, and grill for a few minutes on each side.Cut the cherry tomatoes in half, and thinly slice enough red onion and buffalo mozzarella to your liking.

Place rocket on a plate, topped with cherry tomatoes, red onion, mozzarella and grilled peach.

Add a small handful of chopped basil and some balsamic.
