
If you love kumara fries, you’ll love carrot fries too. Sweet and crunchy, they’re high in Vitamin A and lower in calories than their kumara and potato cousins.
Ingredients

| 2-3 | large carrots | |
| 1 | sprig of rosemary | |
| 3 | cloves of garlic | |
| 1 | tablespoon | good quality olive oil |
Method
Preheat oven to 190 degrees Celsius. Peel carrots and cut into long fry shaped chunks. Dry off any moisture. Place in a roasting dish. Peel garlic cloves and finely chop. Sprinkle over the carrots, along with the leaves from the rosemary. Drizzle over the olive oil. Toss the carrots around in the oil/garlic/rosemary mix until they are coated. Sprinkle lightly with salt and pepper. Cook for 18-20 minutes, or until fries are golden brown and cooked through.Enjoy! Nicola, Eat Well NZ
