Reader favourite: Gluten Free Santa Hat Cakes

I love this recipe, so I though I’d share it with everyone!

These Gluten Free Santa Hats are perfect for the upcoming Christmas Season and are easy to make, and a lot healthier than other chocolate treats.

Recipe:

 

  • 1 Cup Diced Dates (optional)
  •  1 Cup Boiling Water
  • 1/2 tsp Baking Soda
  • 150g NESTLE Dark Melts
  • 1/2 Cup NESTLE Baking Cocoa
  • 3/4 Cup Ground Almonds
  • 1/2 tsp Salt (optional)
  • 1 Cup Rice Flour
  • 1 Cup Plain Yoghurt
  • 1 tsp Vanilla Essence
  • 5 Eggs
  • 1 Cup White Sugar
  • 200g NESTLE Dark Melts (for icing)
  • Whipped Cream (for Santa Hats)
  • Strawberries (for Santa Hats)

 

 

Instructions:

  1. In a microwave proof bowl, place diced dates, water and baking soda. Microwave on high for 3 minutes. Leave to cool then blend to a smooth paste.
  2. In a bowl, mix together the date mixture, yoghurt, cocoa, ground almonds, melted chocolate, rice flour, salt and vanilla essence. Separate the eggs and mix in egg yolks. Mix well to a batter.
  3. In another bowl, beat egg whites to a white foam. keep beating and slowly add in the sugar. Beat until egg whites are stiff and glossy.
  4. Fold the egg whites in with the other mixture until just combined.
  5. Pour into a square tin lined with baking paper.
  6. Bake in a preheated 170 degree oven for 55-60 minutes or until cooked.
  7. Leave in the tin to cool for 5 minutes.
  8. Once cool, ice with melted dark chocolate. Cut into squares. Whip cream, put a circle of cream in each square. Place on strawberry. Finish with a dab of cream for Santa’s hat.
