Christmas Rocky Road
Here is a wonderful recipe for Christmas Rocky Road. Perfect as a gift, a treat for your host or for the guests at your own Christmas event.
800g good quality white chocolate, finely chopped
2 cups white marshmallows, chopped
1 cup candied peel (see recipe at the bottom here), roughly chopped
1 cup (100g) pistachio nuts, roughly chopped
Variations: replace candied peel with dried cranberries, and replace pistachio nuts with lightly toasted almonds.
Melt the chocolate in a double boiler over simmering water until smooth.
Remove from the heat and add the marshmallows, candied peel and pistachio nuts.
Stir until well combined. Pour into a lightly greased 20cm x30cm baking tray, lined with baking paper.
Refigerate for 1hour until set. Cut into bars.
