When I get upset, I need food. And the last week has been a bad one. So bad, only peanut butter chocolate chip cookies will fix it.
Luckily, I knew just the recipe. A facebook friend of a friend Ben King (who coincidentally was also a guitarist/vocalist with Goldenhorse) has a beautiful cooking/baking blog aptly named Never Too Full To Eat, and I’d mentally ‘saved’ the recipe as soon as he’d posted it.
All you need is:
100g butter, softened
3/4 cup flour
3/4 cup oatmeal
3/4 cup peanut butter
1 egg
1/2 tin NESTLE HIGHLANDER Sweetened Condensed Milk
1 cup NESTLE Milk Bits
1. Preheat the oven to 190°C.
2. Combine all the ingredients in a mixing bowl (I used my hands) until reasonably uniform.
3. Place spoonfuls of cookie dough on a greased/lined tray. I used a tablespoon of cookie dough for each cookie.
4. Bake for 10-12 minutes or until beautifully browned. If you’re baking smaller sized cookies, make sure you adjust the cooking time accordingly.
So easy and so comforting. It literally takes about 20 minutes to whip up. I was tasting the cookie dough as I made it and I could tell that these were going to make everything ok in the world again.
