I have long been a fan of Donna Hay but it wasn’t until her cooking series come out last year that I really stood up and started taking notice. Now I have a fully fledged girl crush and it doesn’t stop with her latest book simple dinners.
The thing I love about Donna is that she uses ingredients that you are more than likely to have on hand already (there is no heading to Farro’s to source Mexican wild beans)
My friend came around for dinner on Sunday and I made the pea mint risotto with crispy pancetta. Great thing about this dish is you only use the one! (no ladling stock with this recipe). My friend said it was honestly the best risotto she had ever tasted and bonus I hadn’t been slaving away over the stove while she tried to amuse herself.
This book will become your all time favourite and I guarantee you will use time and time again. But just be ready to use lots of baking paper, Donna seems to be obsessed!
