
There’s nothing like good quality home baking. These melting moments make perfect gifts – surprises your friends or workmates with a little box of shortbready goodness. Based on the Edmonds recipe, these biscuits are dairy-free, but feel free to swap the Olivani for butter if you prefer.
Ingredients:
- 200g Olivani spread
- 1 cup icing sugar
- 1 cup plain flour
- I cup cornflour
- ½ teaspoon baking powder
- Icing of your choice – try a standard butter-style icing mixed with lemon or passionfruit, or even opt for strawberry jam
Instructions:
Preheat oven to 180 degrees celsius
Cream Olivani and sugar until light and fluffy
Sift flour, cornflour and baking power together
Mix into creamed mixture. Ensure that ingredients are well mixed
Roll the dough into small balls and place on a baking tray, flattening them slightly with a fork
Bake for 20 minutes
When they are cool, sandwich the biscuits together with your chosen icing
