Lasagne is perfect winter comfort food, but those layers of mince with thick, creamy cheese sauce mean it’s not the healthiest of dinners.
This recipe by Healthy Food Guide is a delicious, healthy version of lasagne. It includes lots of extra vegetables, fresh herbs and uses Parmesan cheese – a stronger flavoured cheese so you can use less, but still get a good cheesy flavour. Instead of cheese sauce, the recipe uses cottage cheese which reduces the fat content and also makes the process less labour intensive!
This lasagne is a good source of calcium and iron and is high in fibre.
