Homemade healthy muesli

I love a good muesli, but I’m fussy when it comes to muesli and I always end up picking bits out!  They either have too many raisins or too much coconut  Or they’re too high in sugar because of all the the dried fruit, and added sugar.   So the solution – make your own.

This recipe is a ‘cheats’ way to make toasted muesli and uses far less fat and sweetener than other recipes. Simply heat a little honey and oil together in a pan, add the wholegrain oats and stir over the heat for 8 minutes.

Add in cinnamon, flaked almonds, chia seeds, Brazil nuts, pumpkin and sunflower seeds plus a small amount of the Sunsweet antioxidant berry dried fruit mix and you’ve got a tasty muesli that’s high in fibre, provides healthy fats and is low GI.  The brazil nuts mean this muesli provides a source of selenium, an important antioxidant mineral that many of us lack in our diets. Plus the chia seeds add a source of omega 3 fats.
