Chewy chocolate and almond oat cookies

With chunks of dark chocolate and almonds, these oaty cookies are chewy and delicious.  They’re my new favourite sweet treat. Perfect with a cup of tea.

This is a big recipe and makes 40 cookies, half for a smaller batch. Recipe found on All Recipes

Ingredients:

250g butter, softened
200g brown sugar
75g caster sugar
2 eggs
2 teaspoons vanilla extract
150g flour
1/2 teaspoon baking soda
260g rolled oats
125g chopped almonds
175g dark chocolate, cut into chunks

Method

Preheat the oven to 170 C.

In a large bowl, cream together the butter, brown sugar and caster sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour and baking soda . Stir into the creamed mixture until just blended. Mix in the oats, almonds and chocolate. Place heaped teaspoonfuls of mixture onto ungreased baking trays.

Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking tray for 5 minutes before transferring to a wire rack to cool.
