There’s nothing like a good ice cream sundae, and with a beautiful weekend of sunshine, Lots of supermarket sauces have lots of sugar and not a lot of berries so I made this delicious berry sauce to go on top of a scoop of vanilla bean ice cream. I used just a touch of honey to sweeten this and chia seeds to thicken it. They absorb liquid and become soft and gel like and add some omega 3 and fibre to the sauce.
Ingredients for 2 serves
- 1/2 cup frozen boysenberries
- 2-3 tablespoons lemon juice
- 1/2 teaspoon honey
- 2 teaspoons chia seeds
Place the ingredients in a pot and heat over a medium heat. Stir regularly and break up the boysenberries with a wooden spoon. Once the berries have defrosted and the sauce has thickened slightly, spoon over the top of a scoop of vanilla ice cream.
You could also serve this sauce on top of frozen yoghurt. This recipe for berry frozen yoghurt is nice.
