
These bad boys will certainly not be forgotten!
A dear friend of mine has had this recipe for awhile, in her The Healthy Food Guide book. So this week she gave them a crack and we (the taster testers) were not disappointed. I’m not sure they’re exactly ‘healthy’ but boy do they taste delicious (the mixture too!) and are easy peasy to make.
All you’ve gotta’ do is make the mixture, pop them in the oven and then head to bed! You’ll find them perfectly cooked and ready to have with your morning coffee. A great recipe if it’s your turn for Friday morning tea treat at work!
This makes 16. We double it and it was worth it.
2 egg whites, at room temperature
120g castor sugar
Pinch of salt
1 teaspoon vanilla
120g roughly chopped almonds
150g chocolate chips or dark chocolate chunks
Step 1
Preheat oven to 180°C. Beat egg whites and salt until foamy.
Step 2
Gradually add sugar and continue beating until they hold stiff peaks and make a glossy, stiff meringue. Note this takes awhile, even with an electric mixer and especially if you double the mixture so keep going, keep going, it will get there.
Step 3
Add vanilla, almonds (an easy way to roughly chop them is put them in a snap lock and bash the hell out of them with a rolling pin) and chocolate chips.
Step 4
Cover baking tray with baking paper. Drop teaspoonfuls of the mixture on to the paper. Put in oven, then turn oven off. Leave overnight in oven (or for at least 3 hours, until the oven is cold) with door closed.
And then in the morning, suprise! Happy clouds in your mouth, these bad boys will certainly NOT be forgotten.
