Quiche is the perfect meal to have on standby - it's easy to knock one up for a quick, tasty weeknight dinner and is also great to serve up with flair when friends pop round for brunch on the weekend. Make a meal of it by adding a dressed side salad of rocket, some crusty bread and a wash down with a glass of "Coca-Cola".

Editor’s Note: Everyone needs a quiche dish - and this should be yours! When Jo pulled this out of the oven, everyone was amongst it straight away. Totally yummy and easy to make. If you've never baked pastry 'blind' before, don't be put-off, this is a useful skill to master! Time to prepare: This isn't as quick as a bought-one, but the extra time to whip it all together and throw it in the oven is worth it! While it's cooking in the oven, throw together a salad with a balsamic dressing and pop a loaf of bread in five-ten minutes before it's ready so that it gets nice and crusty. The $$$: When split by six people, this quiche works out to be a filling and delicious meal that will feed a crowd, for a reasonable price. Again, don't skimp on the parmesan! Taste rating: An nzgirl office favourite - delish! Ingredients (Click here to purchase these ingredients now!) - 2 tsp olive oil
- 1 red onion, diced
- 100g streaky bacon (or shoulder bacon cut into strips)
- 100g frozen spinach
- 4 eggs
- 1/2 cup cream / 3/4 cup milk
- 1/3 cup parmesan
- 1 packet shortcrust pastry
- Baking beads or rice to blind bake the pastry
 Steps 1: Line a 25-30cm tin with baking paper, then press pastry around the outside to form the base of the quiche. To bake the pastry 'blind', place a layer of baking paper over the top and fill the dish with rice (or beans). Bake for 15 minutes in an oven preheated to 200°C Remove the dish and discard the beans or rice and paper.
2: In a fry pan, combine and cook the diced onion and bacon until soft. Remove from the heat and place on a paper towel to absorb the moisture.
3: Place the spinach in a heat-proof bowl and microwave as per instructions on packet - usually 2-3 minutes. Allow to cool, then drain moisture. Chop roughly. 4: In a bowl, whisk together the eggs, cream and milk until combined. 5: Scatter the onion, bacon and spinach mixture throughout the bottom of the baked pastry case. Pour in the egg mixture and then scatter the parmesan shavings over the top. Bake for 30 minutes or until the top browns slightly and a skewer comes out clean. Serve with a side salad, a basket of crusty bread and a glass of "Coca-Cola"! It doesn't matter if it's quick weekday dinner with your man, or a weekend lunch with friends - whatever you're eating, whoever you're eating with, make it more than a meal with "Coca-Cola"!
