Anya's Delicious Cupcakes

Anya's note: This is a great recipe to make because the cupcakes are so light that they don’t feel so sinful! This is because of all that creaming of the butter and the sugar – so even though it takes a little while to do, it's crucial. The yoghurt helps to keep the cakes moist and is a great tip for the novice baker who always ends up with dry cakes, next time swap your milk out for yoghurt.



 

Fling-a-ling Cupcakes
Makes around 24 cupcakes

Ingredients:
1 ½ cups of self rising flour
1 ¼ cups of all purpose flour
1 cup of unsalted butter, softened
1 ½ cups of caster sugar
½ cup of brown sugar
4 large eggs at room temperature
1 ¼ cups of thick greek yoghurt
2 teaspoons of vanilla extract (plus the seeds of a vanilla bean if you have one)
4 FLING® bars

1. Preheat oven to 180 degrees C and prep your flour by sifting your flours together.

2. In a large bowl cream the butter untill smooth and fluffy. Add the sugar and beat until very fluffy and pale - about three minutes if using a stand mixer.. longer by hand! If you forgot to leave your butter out or it refuses to soften, cut it into cubes and then rub with your fingers so it softens in your hands. It’s an old pastry making tip but it totally works.



3. Add your eggs one at a time, beating well after each addition.

Next mix your vanilla extract (and vanilla bean if you are using one) into your yoghurt and put aside.

5. Add the flour to your sugar and egg mixture gradually, a few tablespoons at a time to begin with and alternate that with adding the vanilla and yoghurt combination. Towards the end of adding the flour, add two crushed up FLING® bars and mix untill the ingredients are incorporated but do not overmix.

Carefully spoon the batter into cupcake liners, filling them about ¾ full.

Bake these in your oven for 15-20 minutes or untill a skewer inserted in the centre of the cupcake comes out clean (check regularly).



8. Cool the cupcakes in the tins for 5 or 10 minutes, then remove from tins and ice while still warm. Decorate with crushed FLING® bars and a few silver confectionary balls and serve whilse warm.

Anya's Very Quick Butter Icing
Ingredients:
Icing Sugar
Unsalted Butter
Vanilla
Lemon juice
2 FLING® bars and silver confectionary balls (for decoration)

1. Melt a little butter in a bowl in the microwave ( 2-3 tablespoons or so).
2. Add a few tablespoons of icing sugar (untill it forms a paste) and then whip with a baloon whisk until incorporated.
3. Add icing sugar a heaped tablespoon at a time whilst whipping with your baloon whisk untill the icing is white and forms firm peaks.
4. Add a small squeeze of lemon, a teaspoon of vanilla and whip untill incorporated.
