Test Kitchen Challenge: Delicious Desserts

Do you look at recipes in glossy magazines and cookbooks and despair of ever making anything like that yourself?

The nzgirl Test Kitchen is about real, easy food that anyone can make. We search out recipes, then test them, so you can see what the food really turns out like. 


This month we decided to do things a little differently. We broke into two teams and set ourselves a Test Kitchen Challenge! The brief was to create deliciously seductive desserts, perfect for February, the month of Summer Lovin’. Check out the mouth watering goodies we whipped up here, and read on to find out which team won…

Milk Chocolate Pots de Crème
Team A: Gemma, Vicky and Bonnie
 
Editor’s Note:  Want to impress someone special with a decadent dessert? This tasty recipe takes only seconds to make but is sure to win you massive brownie points.
 
Time to prepare: It took us no more than five minutes to whip up this dessert, with cooling time on top of that. Because it’s so quick and easy it makes the perfect end to an elaborate and more time consuming first course.
 
The $$$: The small ingredient list makes this an economical choice.

Taste rating: The girls in the office couldn’t get enough of the cold, creamy chocolatey goodness, which was perfectly balanced with a generous serving of strawberries and whipped cream.
 
Ingredients
Makes 6 - 8 servings
 
2 cups of Cadbury milk chocolate chips
½ cup of light cream
½ teaspoon vanilla essence
Whipped cream
 
 
Steps
1: Place milk chocolate chips and light cream in a medium microwave-safe bowl and microwave on high for one minute - stir.
 
2: If necessary, microwave at high an additional 15 seconds at a time, stirring after each heating (do not over heat - the chocolate should be just melted and smooth). Add vanilla.
 
3: Pour into demitasse cups or very small dessert dishes (we used little espresso cups).
 
4: Cover and refrigerate until firm (if you don’t have much time, the freezer works fine!).
 
5: Serve with whipped cream and strawberries (if strawberries aren’t in season substitute with other berries or any type of fruit).


Baking tip:
As long as you don’t burn the chocolate you can’t go wrong with this no-fail recipe. Because we didn’t have a suitable microwavable bowl, we actually melted the chocolate and cream in fry pan - it took two seconds and worked perfectly!

Frozen Chocolate Cake

Team B: Tee, Sarah and Ramarea

Editor’s Note: We learnt that ‘baking’ is less like “Jamie Oliver throw-it-all-together-style” and more like a “Nigella Lawson domestic-goddess-science-experiment style”. Word of advice - follow the recipe! Because this is a frozen dessert, you can keep some on ice, ready for whenever a romantic moment (or dinner party of ten) appears.
 
Time to prepare: This dessert needs to be made at least a day ahead as it has to be frozen before eating. The prep time takes about 20 minutes and it needs to bake for another 20 minutes after that, with a bit of cooling time before you chuck it in the freezer.
 
The $$$: This dish is pretty much the definition of bang for your buck! Served up beautifully for an intimate dining experience or large-scale dinner party you couldn’t trump this for value even if you served popsicles!

Taste rating: The office was unanimous; this dish scored full marks on the taste scale.
 
Ingredients
Makes 16+ generous dessert serves.
 
500 grams dark chocolate (Old Gold or Energy are good)
155 grams butter
4 eggs (room temperature)
½ cup caster sugar
1 tbsp flour

Additionally:
Baking paper
Garnish material (we used whipped cream and caramel sauce, but a berry coulis is good)



Steps
1: Melt the chocolate (broken into pieces) and the butter over a low heat. Tip: Put the chocolate and butter pieces in a metal bowl and sit it on top of a saucepan of simmering water. Stir occasionally. When combined into a chocolate river, leave to cool on the bench.
 
2: Line a round 20cm diameter spring-tin with greaseproof/baking paper, leaving excess paper around the top to help you get the cake out at the end.
 
3: Break the eggs into a mixing bowl and add the sugar. Using an electric beater, beat until thick and creamy. This takes about ten minutes.
 
4: Fold the flour into the egg and sugar mixture, then mix in the cooled chocolate mixture.
 

 
5: Pour the combined mixture into your tin and spread evenly. It should fill up about two thirds of the tin. Bake in the middle of a moderate oven for 180 degrees on bake (not fan bake). You’ll know it’s cooked when it’s firm to touch and a skewer comes out clean around the edges, but it’s still gooey in the middle. Take out, leave to cool and then stick it, covered, in the freezer.
 
6: To serve, cut into wedges (a little goes a very long way) and position on your plate. Dust with icing sugar, add some whipped cream and caramel sauce. Enjoy!
 
Baking tip: It’s important to follow recipes with baking, usually the measurements, instruments, temperatures and cooking times are exact for a reason. Don’t forget to pre-heat your oven and ensure the trays you will be using are in the middle for even cooking. Also, if the tin you’re using is a bit smaller than the recipe suggests, the cooking time will be shorter, so keep an eye on your baking!

The verdict: Jenene was our reluctant judge who had the very hard task of tasting both desserts (yea right!). In the end she decided that the overall winner based on taste was Team A with their delicious but simple Milk Chocolate Pots de Crème. However, Team B didn’t walk away empty handed, they won the award for effort, enthusiasm and degree of difficulty, for their sophisticated Frozen Chocolate Cake.
