Quick and Easy Gluten-Free Meals

It’s easy to create quick, tasty and healthy gluten-free meals.
 Being gluten-intolerant can be daunting if you don’t know what to eat. A good website to check is www.mfd.co.nz, which lists ‘safe’ foods for a range of allergies. Here are some fail-safe recipes for when you don’t have a lot of time in the kitchen, and let’s face it who can be bothered cooking a big meal after a hard day at work?
Warm Pasta Salad
This is really filling, tastes awesome and is great for lunch the next day!
1 pack of Healtheries Simple Pasta (available at Woolworths) 1 pack of Wattie’s Potatoes O’Brien ¼ cup of fresh herbs Feta cheese to taste 2-3 table spoons of olive oil Juice of one lemon Salami (Verkerks and Pieters brands are gluten free)
Cook the pasta and lightly fry the Potatoes O’Brien. Once they are cooked mix in with the herbs, feta, oil, lemon juice and salami.
Serves 2

Pear, walnut and green salad This is perfect for a light meal on a hot summer’s night. Team it with a nice cool glass of Pinot Gris.
3 pears thinly sliced 1 1/2 cup of walnuts, chopped Brie or camembert cheese to taste Salad greens Lemon juice Olive oil
Mix the salad greens, walnuts, pears and cheese together in a bowl. Add the lemon juice and a dash of olive oil to taste.
Serves 2
Home-made pizzas
This beats takeaways and is great for a lazy Saturday night dinner.
1 pack of Venerdi pizza bases (available at Commonsense Organics) Leggo’s Pizza sauce Tasty cheese, grated 1 tin of diced pineapple 1 pack of Beehive bacon Fresh herbs
Cover the bases with pizza sauce then go crazy with the toppings. Cook in the oven for 10 – 15 minutes at 180 degrees for the best pizza you will ever taste.
Serves 2 -3
A twist on fish burgers Perfect for a casual BBQ dinner with friends
 2-3 fillets of butterfish (or similar) 2 or more slices of gluten-free bread (available at Commonsense Organics and most supermarkets) 1 avocado, sliced 1 pack of Kumara Rosti from Kauri Coast Kumara 1 cucumber, thinly sliced 1-2 tomatoes, sliced Blue vein cheese Sour cream Eta yoghurt and garlic dressing
Grill the fish and the kumara cakes on the BBQ and lightly toast the bread. Spread the sour cream or Eta dressing on the bread then add in the other ingredients to create this mouth-watering sandwich.
Serves 2-3
