Christmas is a time to be jolly which is why it’s also the best season to indulge in some good old endorphin releasing chocolatey treats and sweet eats.
But with presents to buy and sunbathing to catch up on, Christmas is also the worst time to get stuck in the kitchen. In order to get your mandatory treat hit this silly season whip up these simple and easy recipes that are not only sure to impress your friends, but also your taste buds.
Baileys Chocolatini Serves 1 What you’ll need: 50ml of Baileys 10ml Smirnoff Vodka 15ml of Chocolate liqueur
Step 1: Drop several ice cubes into a shaker Step 2: Pour over the Baileys, vodka and chocolate liqueur Step 3: Shake together Step 4: Strain drink into a chilled martini glass. To garnish: Sprinkle some chocolate shavings, cocoa or hot chocolate powder on top.
Orange Mango Cheesecake Ice-Cream Serves 8-10 What you’ll need: 2 x 250g pottles spreadable cream cheese Grated rind and juice of two oranges 425g can mangoes in light syrup, well drained 2 eggs 2 egg yolks 3/4 cup castor sugar Step 1: Put the cream cheese, egg yolks and castor sugar into a food processor and blend until the cream cheese is very smooth and the mangos pureed. Step 2: Beat the eggs, egg yolks and castor sugar well until the mixture is a thick and pale lemon in colour. Step 3: Add the egg mixture to the cream cheese and either pulse to combine or fold together with a holed spoon. Step 4: Pour contents into a non-stick tin and freeze overnight.
Baileys Pots de Crème Serves 6-8
What you’ll need: 425 ml cream 150 ml Baileys 1/2 tsp vanilla essence 1 tbsp caster sugar 225g plain chocolate pieces 5 egg yolks 1 egg To serve: Whipped cream, cocoa powder, brandy snaps
Step 1: Put the cream, vanilla essence and chocolate into a saucepan and simmer gently, stirring all the time, until all the chocolate is melted and the mixture is smooth Step 2: Allow mixture to cool then add the Baileys Step 3: Lightly mix the whole egg, yolks and caster sugar before stirring in the chocolate cream. Step 4: Strain the mixture into 75ml custard pots, or six ramekins then cover with lids or tin foil. Step 5: Stand the pots in a roasting tin containing enough hot water to come half way up the side of the dishes. Step 6: Cook at 150C for about 1 hour or until lightly set. Step 7: Remove from tin and cool before chilling in the fridge. Sep 8: Top with a spoon of whipped cream and sprinkle over some cocoa powder. Serve with brandy snaps.
Five-Minute Dessert
What you’ll need: 250g dark chocolate 125ml thickened Cream 1-2 tbsp Baileys Irish Cream Strawberries
Step 1: Melt the chocolate and cream together over a very low heat. Step 2: Stir through the Baileys and transfer the mixture to a fondue pot Step 3: Dip in strawberries
