No time to cook? Can’t afford to buy takeaways or prepared meals? Want something which is healthy, yet easy to make? This quick, delicious dinner is up there on my ‘never-fail’ list of meals. Not only do these kebabs taste great, but they can be ready within 20-30 minutes of walking in the door after work. This version feeds two people but you can easily adapt it to feed four or more. Just add extra meat and some olive oil to ‘pad out’ the marinade.
You will need:
500g of lean steak (scotch or sirloin is best)
Bamboo skewers (soaked in water to prevent burning)
1 tablespoon crushed garlic
1 tablespoon minced ginger
2 tablespoons soy sauce
Approx ¼ cup olive oil/peanut oil
Hot sauce/chili powder to taste (optional – but I love 5 drops of Kaitaia Fire)
Yoghurt dipping sauce:
Plain yoghurt (around ¼ cup)
A couple of crushed mint leaves
1 teaspoon diced cucumber
Mix sauce ingredients together in a pretty little bowl – instant class
Method: Turn your oven onto grill, at around 200 degrees celsius. In a medium sized bowl, combine garlic, ginger, soy sauce and your optional hot sauce/chili powder. Add some oil to ‘pad out’ the marinade so you’ve got enough to cover the meat.
Dice the steak into small cubes, removing any fat. Add to the marinade and stir through. Leave for anywhere between 5 minutes to 20 minutes, depending on how much time you’ve got.
Thread meat onto bamboo skewers and lay across a baking tray (might pay to put tin foil underneath). Grill for 6 minutes a side, turning once. Serve with yoghurt dipping sauce, rice and salad. Peanut satay sauce on the side is also a winner.
