Breakfast Recipes

Breakfast is one of the most important meals of the day. It refuels your body after 8 hours of sleeping and gives you both physical and mental stamina to start your day.

Skipping breakfast will leave you feeling drained and more likely to choose foods that are high in sugar and fat by mid morning. Here are some great recipe ideas for tasty yet healthy breakfasts to keep you going...

Porridge
For one serving, add ˝ cup rolled oats to 1 cup of water and microwave for 2 – 3 minutes, stirring halfway through. If necessary add a little more water to get a smooth consistency. It doesn’t have to be boring, try these additions once you’ve made your porridge:

  • Chopped banana and vanilla yoghurt
  • Grated apple, cinnamon and drizzled honey
  • Canned boysenberries and berry yoghurt
  • Flaked almonds, sultanas and vanilla yoghurt


    Fruit Smoothie
    There are many ways to make a fruit smoothie interesting. Add whatever fruit you please and chose your favourite yoghurt to complement the flavour.
  • 1 cup trim milk
  • ˝ cup low fat yoghurt
  • 1 banana

    You can add any other fruit of your choice – such as ˝ cup berries, ˝ can of drained mango, ˝ can of peaches etc. Put everything in a blender and blend
    for a minute or two until smooth and creamy.


    Oaty Pancakes with Berry Sauce

    Feel like something a little special on Sunday?
    Here is a recipe for yummy oaty pancakes.

    Makes 10 – 16 pancakes
  • 3/4 cup milk
  • 3/4 cup rolled oats
  • 1 egg
  • 2 tablespoons sugar
  • 1/2 cup flour
  • 2t baking power
  • ˝ teaspoon cinnamon

    Pour milk over rolled oats. Add remaining ingredients. Mix with a fork until ingredients are just combined. Spray a non stick fry pan with canola spray. Spoon the mixture onto the heated pan. When bubbles appear, flip over and cook until golden brown.

    Berry Sauce
  • 1 cup of mixed frozen berries
  • 1 teaspoon lemon juice
  • 1 tablespoon sugar
  • ˝ teaspoon cornflour

    Simmer berries in a saucepan. Add lemon juice and sugar and stir to dissolve. Mix cornflour in a cup with a small amount of water to make a paste. Add the cornflour paste to berry mixture and stir till thickens. If you don’t have frozen berries, serve with chopped bananas, natural yoghurt and a little honey.
