As the days get lighter and the weather gets warmer our preference for foods change towards lighter, fresher foods with a summer flavour. Here are three simple and tasty healthy recipes to try out this spring... Simple Mango Chicken SaladServes 4 This is an easy yet delicious light meal for warm spring days. - 1 mango, peeled and cut into slices OR use canned mango slices drained of their juice
- 500g smoked chicken breast, cut into slices
- Buttercrunch lettuce or other salad mix
- 5 spring onions, chopped
- 1 red pepper, cored and cut into thin slices
- Small handful of cashews
Dressing - 1 tablespoon red wine vinegar
- 3 tablespoons olive oil
- 2 teaspoons honey
Simply mix all ingredients together in a large bowl and sprinkle with a handful of cashew nuts. To make the dressing, combine ingredients in a small bowl and whisk well until combined. Pour over the top of the salad right before serving. B eef and Vegetable Noodles This beef and noodle dish makes a quick and satisfying meal with tasty Asian flavour. - 375g egg noodles
- Cooking oil spray
- 400g beef schnitzel, cut into strips
- 1 red capsicum, thinly sliced
- 2 cups snow peas, trimmed
- 2 tablespoons reduced salt soy sauce
- Juice from one lime
- 1/4 cup tamari dressing
Cook noodles following packet directions. Set aside. Heat oil spray in a wok over a high heat. Add beef and stir-fry for 2 minutes to sear. Add capsicum and cook for 3 minutes. Add snow peas and cook for 1 minute. Add soy sauce and stir, cook, stirring for another 2 minutes.
Add the noodles back into the pan and toss through combine. Take the pan off the heat and squeeze over the lime juice and mix the tamari dressing quickly through noodles.
Homemade PizzaSkip the high fat fast food pizza and make your own at home with this simple recipe. 1 pre-purchased pizza base 3 tablespoons tomato paste ½ punnet of cherry tomatoes 200g beef steak, cooked and cut into cubes 1 large Portabella mushroom, sliced into thin slices Grated Edam cheese Preheat oven to 200° Spread the pizza base with the tomato paste. Cut the cherry tomatoes in half and add to the pizza along with the cooked steak, and chopped mushrooms. Sprinkle lightly with the grated Edam cheese.
Serve with a big side salad. Yum!
