Yummy Recipes: Whisky Infused Carrot & Orange Cake

Make like a domestic goddess with this recipe for a super easy, but super scrumptious American style cake, courtesy of www.whiskyshop.co.nz. It's not your average carrot cake, it's got a delicious twist that we're sure you'll love...

 

Ingredients:
 
For the cake:
250g self-raising Flour, (sieved)
1 pinch salt
1 tsp baking powder
100g caster sugar
2 eggs
50 g runny manuka honey
150mls sunflower oil
1 ½ cups grated carrot – (About 1 large carrot)
Zest of 1 large orange
 
For the syrup:
100g caster sugar
30ml (or to taste), Orangerie orange infused whisky
150mls water
Juice of half an orange
(If you don’t have orange infused whisky, use a Speyside single malt like Glenlivet or Glenfiddich. Use the zest of half an orange and infuse it into the syrup. Strain before pouring over the cake)
 
To serve:
Crystallised nasturtium flowers
 
Method:
 
Preheat oven to 180degrees. Line the base and sides of a 22cm spring form tin with greaseproof paper.
 
Mix the wet ingredients: sunflower oil, yogurt, honey, eggs together. Mix the flour, salt, baking powder and sugar together and place into a food processor.
 
Start the food processor and gradually but steadily pour in the wet ingredients until just combined. Add the grated carrot and orange zest and pulse until evenly combined.
 
Pour the mixture into the cake tin and bake for 45 -50 mins until a skewer comes out clean. Leave to cool for 5 mins, then remove from the tin and place right side up on a cooling rack.
 
Meanwhile make the syrup:
Ina small heavy based saucepan heat the water, orange juice and sugar until the sugar has dissolved. Add the orangerie whisky and continue to heat gently for 5 mins to allow the alcohol to evaporate (optional).
 
Place the cake onto a plate and pierce all over the top and 4/5ths of the way through with the skewer. Slowly drizzle over the syrup until it has all been poured on.
 
Leave for 1 hour. Decorate with the nasturtiums and enjoy.
