The weekends are bliss – sleeping in, no deadlines and nothing to rush around for! It is time to take things at your own pace.
There’s nothing better than enjoying something a bit special for breakfast in the weekend, so here are four yummy and healthy recipes to try... Bircher MuesliBircher muesli is a traditional swiss museli where the grains are soaked overnight. It is truly delicious and very healthy as well. Serves 1-2 ½ cup rolled oats ¼ cup apple juice ½ cup water ½ teaspoon cinnamon 1 apple, grated ½ cup yoghurt 2 tablespoons slithered almonds. Soak the rolled oats in the apple juice and water overnight. The next morning mix in the cinnamon, grated apple, yoghurt and almonds. Add extra fruit and drizzled with honey if desired. Oaty pancakes with Berries and YoghurtAdd some fibre to your pancakes with the addition of rolled oats. Makes 10 – 15 pancakes 3/4 cup milk 3/4 cup rolled oats 1 egg 2 tablespoons sugar 1/2 cup flour 2t baking power Pour milk over rolled oats and leave to soak for 10 minutes. Add remaining ingredients. Mix with a fork until ingredients are just combined. Spray a non stick fry pan with canola spray. Spoon the mixture onto the heated pan. When bubbles appear, flip over and cook until golden brown. Top with berries and drizzle with some vanilla yoghurt and honey. Apple Cinnamon Breakfast Muffins2 cups bran ¼ cup wholemeal flour 1 cup white flour 1 cup yoghurt ¼ cup of grapeseed oil ¼ cup brown sugar 1 teaspoon baking soda 2 tablespoons golden syrup 1 tablespoon boiling water 1 large apple, grated 1 large ripe banana, mashed Pour boiling water over bran in a large mixing bowl and stir to mix. Leave to cool and mix in the flour. Combine yoghurt, oil, brown sugar, golden syrup, grated apple and mashed banana. Dissolve the baking soda in the boiling water and mix in with the yoghurt mix. Make a well in the middle of the flour and bran mix and pour in the liquid mixture. Mix just to combine. Leave the mixture for 15 minutes, then spoon into greased muffin tins. Bake for 20 minutes.
