I ngredients 1 beetroot, peeled and grated 2 Lebanese cucumbers, finely sliced diagonally 1 bunch of chives, chopped in three diagonally ¼ green cabbage, finely chopped 200g green beans, trimmed, blanched and sliced Dressing 2 tablespoons olive oil 2 tablespoons squeezed orange juice 1 teaspoon seeded mustard Salt and pepper Place all salad ingredients in a bowl. In a small bowl, mix the dressing ingredients together. Pour over salad ingredients and toss. Serve with lean steak and new boiled potatoes. Summer Potato and Herb Salad Healthier than your traditional potato salad, this is a tasty twist on the traditional favourite.
Ingredients1kg potatoes 1 red onion, sliced 3 tablespoons olive oil ½ cup of basil leaves ¼ cup of mint leaves ¼ cup of chopped chives Dressing ¼ light sour cream ¼ cup mayonnaise 2 cloves garlic, crushed 1 tablespoon lemon juice salt and pepper To make the dressing, mix all the ingredients together and set aside. Thinly slice potatoes. Heat a heavy bottom pan. Brush the potatoes with the oil and cook for around 6 minutes each side or until tender. Place the mixed herbs, red onion and potatoes together on a plate and drizzle over the dressing. Blueberry and Banana Ice cream A cool and refreshing way to end a meal, this ice cream is packed with antioxidants from the blueberries, making a healthy desert.
